A special breakfast for a loved one

Greetings from the 1825 Inn bed and breakfast.  This blog is another installment from our food series.  Again, we write to you at a difficult time for just about all of us.  The coronavirus has shut down much of the country leaving many feeling scared, lost, or sad.  This can lead to greater stress in our relationships loved ones.  Therefore, now is a great time to show that someone special how we feel for them and what better way is through food.  Many have a little extra time off from work so today we are going to show you how to make a great looking B&B breakfast with very little effort.  Today’s recipe is our German apple pancakes.

Ingredients:
2 eggs
3/8 cup milk
3/8 cup flour
1/4 tsp salt
1/4 tsp baking powder
1/8 cup brown sugar
1/4 tsp cinnamon
1/2 apple peeled, cored and sliced thin
(I prefer honeycrisp but granny smith will work as well)

Preheat oven to 400F

Coat the bottom and sides of a 9″ pie dish with 1 tsp. of melted butter.  You can also use a non-stick spray if you prefer.  Arrange apple slices in a single layer in bottom of sliced apples in a pie dish
dish.  In a medium bowl mix milk and eggs together.  Add flour, salt, and baking powder .  unmixed pancake batter in bowl
and mix just until combined.  Pour mixture over apples.  In a small bowl mix brown sugar and cinnamon.  Sprinkle over batter.

Bake for 20-25 minutes until golden brown.  Serve with choice of sausage or bacon, maple syrup, and and a side of fruit with juice and coffee and you have spectacular breakfast.

We serve 3/4 of a dish per serving.  The recipe can be easily doubled or tripled as needed.
